Pilot projects – CMR (MR311A) FEADER 2022
This project evaluates and validates new oxidative aging processes, carrying out experimental vinifications in ovoid concrete and granite tanks, in comparison with reductive aging processes in stainless steel. The experimental vinifications are carried out with Albariño for white wines and Sousón for red wines.
The main objective of the project is to identify oxidative aging protocols that maximize their oenological potential and allow their recovery and valorization in Atlantic viticulture. The viñOXs project characterizes the resulting wines in terms of basic oenological parameters, aromatic and polyphenolic profiles and sensory analysis (professional and consumer). The processing of the results makes it possible to characterize and evaluate each of the aging protocols and their key aspects in the oenological, technical-productive, economic and market fields.
The project also validates different cleaning and sanitization protocols for these alternative tanks and performs a Life Cycle Assessment (LCA) of the proposed aging alternatives, as well as of the materials of the tanks, evaluating their carbon and water footprint and finally their environmental viability.
The project started in May 2022 and ends in November 2024, with 80% FEADER funding, and with the participation of the research centers of the Estación de Viticultura y Enología de Galicia (EVEGA – AGACAL) and the Misión Biológica de Galicia (MBG – CSIC).
